Grapes: Sangiovese 90% , Canaiolo 5% , Malvasia Nera 5%
Vineyard: selected Chianti Classico grapes produced in the family vineyard faces south-south west. The territory has a moderate inclination with a ground composition equilibrium of stone (Alberese and Galestro) and clayey elements
Wine-making: The grapes are subject to fermentation in inox steel tuns at a temperature less than 27° C, for 15-20 days, the time needed to extract from the skin the right balance between colour, poliphenols, tannins and other characteristics typical of Chianti Classico. After alcoholic fermentation, the wine is placed in cement tanks for the second fermentation, in order to totally exhaust that the malic acid. Only at this moment is the wine ready to age in the wooden casks.
Ageing: The wine has a rest of at least 3 years in oak casks 10 –20 hl.
Refining: The Millenium Losi Riserva has a further rest in bottles for 12/18 months before the merchandising.
