«Sublime wine»: this great Valtellina specialty is the maximum expression of the typical flavors of Valtellina.
The carefully selected grapes are harvested in crates and stowed to wilt in the fruit tree during the autumn period.
Only in mid-December, after approx. two months, they are pressed. During this period there
is a significant concentration of sugars and aromas. Fermentation takes place very slowly,
both for the low cellar temperatures and for the high sugar concentration.
The wine obtained is very full-bodied, rich in extracts and anthocyanins,
with an abundant presence of soft and round tannins.
The bouquet has notes of toasted almonds while on the palate there is the pleasant aroma of raisins.
Sforzato is a product of particular importance for the Valtellina winemaking economy.
