GRAPES: 100% Chardonnay harvested in early September with strictly manual harvest.
PRODUCTION AREA: hills of the valley of Cembra at 400 - 600 meters s.l.m. and exposed to the south-east and south-west.
HARVESTING FORM: Simple trentina pergola with plant density of 3,500-4,500 vines per hectare.
CULTIVATION: low environmental impact on naturally inert soil.
UNITARY PRODUCTION: 10 T / ha is 2.2 - 2.8 kg grape / strain
VINIFICATION: Pneumatic filling of whole grapes; soft pressing with yield of 60% use only of the mustard flower for the Chardonnay; fermentation in steel wineglasses at controlled temperature using selected yeasts
TIRAGGIO: in bottle with rigorous respect of traditional rules
REFINEMENT: in basement at constant temperature of 12 - 13 ° C - for over 40 months on its own yeasts
ALCOHOL GRADE: 12.5% vol.
