Vinification and aging: fermentation in stainless steel vats; maceration for circa 20 days at a controlled temperature of 28-30°C. Shortly after alcoholic fermentation the wine is transferred into barriques of Slovanian oak where malolactic fermentation takes place and where it is subsequently aged for 24 months. Once bottled, the wine remains for a further year stored on the estate for refinement prior to release.
Colour: intense ruby red
Tasting notes: incense and citrus marmalade. The tannin weave is very refined and balanced. The acid note, typical of Sangiovese, confers a particular length and vivacity to the taste, bringing forth a marked aftertaste of liquorice and caramel. This wine in its own unique and unmistakable manner – like the Cabernet Sauvignon in 91 – expresses the characteristic salinity, minerality of the terrain.

egend: Nicolò and Alessandra talked extensively and with excitement about whether Cabernet and Sangiovese would produce wines which were more linked to the territory than to their intrinsic characteristics. The discussion led to planting two different vineyards. The one who maintained predominance of territory was right, but for the sake of family peace we will not mention the name.
