Vinification and ageing: fermentation and maceration for 25 days in open-tops oak tuns, further ageing of 48 months in oak barrels followed by a passage of 12 months in cement and a minimum ageing of 12 months in bottle. A deep ruby red with elegant brick red shadows. It express itself as a symphony of aromas going from the intense smell of cherry and strawberry to a fresh balsamic note of Mediterranean herbs.
Tasting notes: An impressive, broad structure that reveals a great minerality and a slightly bitter aftertaste. Serve with roast meat, aged cheeses and pasta.
