THE ELEGANCE OF CA’ D’OR TASTE
It comes from our Grand Cru vineyards planted with Chardonnay and Pinot Noir grapes. After 7 months for the first fermentation in small steel tanks, it rests for about 30 months, aging, maturing and refermenting in the bottle, in contact with selected lees, in the darkness and silence of the Cellar.

Vineyards: are north-south and west-east oriented with about 4000/4500 vine-stocks per hectare that in average are about 8/12 years old.
Average production: 3/4 kg per vine-stock corresponding to 120/130 q. per hectare.
Grapes: aromatic variety typical from Treviso province.
Growing system: Sylvoz.
The grapes are manually harvested in September and are then soft pressed. The skins are then subject to a short cold maceration and the must to static racking. The must primary fermentation takes place in steel tanks at 18/19°C with select yeasts. The new wine is then kept on the noble lees for some weeks. Then the foam removal lasts 20/25 days at 18°C. After that the sparkling wine is kept on the lees for some weeks. Then the tartaric acid is stabilised and the sparkling wine is bottled. Final ageing in bottle.

THE FRUITY EXPRESSION
OF CA’ D’OR TASTE
It comes from our Grand Cru vineyards, planted with Durella grapes. It ferments for about 12 months in small steel tanks, in total absence of sulphur dioxide, and then it ages in the bottle. It is produced every year with grapes of the same vintage, so, while maintaining its soft fresh and fruity features, every year it also gives us slightly different aromatic notes, because each season has its own distinctive note.

Our wine has born on the vineyards hills of Ome, near iseo, particularly exposed and breezy, made by Chardonnay grapes. After 7 months for the first fermentation in small stainless steel tanks then for 30 months or so, rest, matures and ages re-fermentation in the bottle with selected yeasts, in the darkness and silence of the cellar.
