Assunto Riserva is only produced in the best harvests and only in a small quantity, about 300-500 bottles. The grapes are carefully selected after being handpicked from the 30 year-old vines in the same vineyard where Assunto Brunello di Montalcino originates, with a production of about 10-15ql per hectare. The grapes are fermented in temperature-controlled stainless steel vats for about 20-25 days and undergo pumping over and délestage to naturally extract the tannins and colour from the skins as much as possible which is what will give the future wine longevity and structure.
The Assunto Brunello Riserva is aged in Slavonian and French oak barriques for about 40 months. During the maturation period, the wine softens its tannins and slowly absorbs any aromas and fragrances while in contact with the wood, all of which can be found in the glass.
After ageing, the wine moves to the bottle for a further 6-7 months of refining. The wine is released on the market six years after the harvest.
Intense ruby red in colour tending to garnet. Elegant and intense bouquet. On the palate dry, warm, robust and persistent. Excellent with game, roasted red meat, and aged cheese. Wine to lay down or meditation wine.
