The winery of the company is a stone building in the area of the villa and is kept by a zone of reception
of the grapes and fermentation with temperature-controlled vats of 50 - 72 Hl and by a refining area
with 500 and 1,500 liters wood. There are also vitrified cement tanks useful for refining wines that are
bottled in the spring following the harvest.
In 1999 an improvement plan was implemented to make all the rooms of the cellar with washable floors
and walls more functional and modern. In the upper floor of the cellar there is the recently restored vinsantaia
and some for sale for the tasting of the products. The bottled products, on the other hand, are stored
in warehouses separate from the wine-making cellar.
