By virtue of centuries of winemaking experience, Attems chose to invest in its future in the vineyards as well as in the winery. After the modernisation of its production structures, the number of hectares for wine-growing rose. In addition, a new winemaking facility was established, specifically designed to enhance the characteristics that the region confers to its fruit crops.
Here, the grape clusters are brought in separately from each vineyard block. Then, during pressing and maceration of the fruit, oxygen contact is kept at a minimum to preserve the aromatic compounds of each grape variety. Fermentation temperatures and lengths are then custom-regulated for each variety, to maximise the complexity of the final wine. Each phase of this process is being supervised by the technical director Gianni Napolitano, who from the spring of 2001 has been guiding the company from success to success.
