TYPE: Wine naturally refermented in the bottle.

VINEYARD:The grapes come from our vineyard adjacent to the winery at Castelnuovo del Garda.
GRAPES: Cortese 100 %
+ 5 % Garganega Passita

HARVESTED: Harvested by hand and processed immediately.

VINIFICATION and AGING: The wine is born from a double natural fermentation.
The first comes during the initial processing (vendemmia) where the pressing and processing of the Cortese grapes is done in the traditional manner.
The second comes while bottled. To the wine made in April is added the mosto from White Passito still fermenting, which adds the sugars and the yeasts necessary to aid in this new fermentation. This second fermentation gives it the characteristic effervescence completing its evolution.
Bottled without sulfides.

DESCRIPTION: A straw yellow color. Fine and persistent effervescence. Your nose will get the hint of white flowers and other very elegant aromas. The taste, savory with minerals. The effervescence will enhance the scents of pineapple and honey.

GOES WITH: White effervescent wine. Optimal as an aperitif or with pizza. Goes well with light dishes or fried foods.
Ideal with dry cakes and traditional sweets.
Serve at temperatures between 8-10°C (48 - 50°F).
