TYPE: Rosè Dry Wine
VINEYARD:The grapes come from our vineyard adjacent to the winery at Castelnuovo del Garda.
GRAPES: Corvina 70 %, Rondinella 30 %
HARVESTED: Harvested by hand and immediately processed.
VINIFICATION and AGING: A cold maceration of the grapes for about 8 – 10 hours is necessary to obtain a bright and intense colored mosto (concentration of the grapes). Once the concentration is attained, it is fermented in a temperature controlled environment not to exceed 18 °C (64°F) to bring out the best aromatic expression from the wine.
After the fermentation, the wine rests atop the sediment for at least 3 months.
Aged in the bottle 2 months.
DESCRIPTION: Rosè color with violet reflections. Your nose will detect the scent of small red fruits and eucalyptus. The taste has an optimal balance between softness and mineral flavor. A reminder of black currant and citrus.
SERVING SUGGESTIONS: Excellent as an aperitif, goes with first courses like risotto or pasta. Serve with main courses like white meats or fish, sea of lake. Optimal also with pizza.
Serve at temperatures between 10-12°C (50 - 54°F).
